AbstractCasein is an important milk protein. β-casomorphins (β-CM)are opioid peptides produced by the digestion of β-casein. Two major(A1 and A2)alleles of β-casein exist in cattle populationsβ-casein A1 and related minor variants bearing histidine at residue 67 yield bioactive β-CM-7whereas the A2 variant with proline in that position does not generateβ-CM-7 by gastric and gut enzymes during digestion. A significant relationship was observed between consumption of β-casein A1 and the incidence of type 1 diabetes. LDL oxidation byβ-CM-7 constitutes an important link between the risk of heart disease and milk protein consumption.It has been postulated that neurological conditions such as autism, schizophrenia, post-partum depression, and and sudden infant death syndrome may be related to β-casein intake since β-CM-7 reaches the brain cells and cause symptoms associated with the diseases Caseinophosphopeptides are produced on an industrial-scale and have been considered for application as components in 'functional foods' and pharmaceutical products randomized clinical trials are needed to reveal if dairy products could be a complementary treatment for oral health. © 2011 Nova Science Publishers, Inc.
